If I had a day that I could give you

I’d give to you a day just like today

John Denver – Sunshine On My Shoulders

It was that kind of day. Actually, it was that kind of weekend.

On Saturday, if you were passing by the house, you would have heard this phrase many times throughout the day: “Well that was easy!” Everything that could go right, did, and it went smoothly. Not something we normally encounter but something I hope becomes our new normal.

Today, I woke up to sunshine and the smell of spring. A very cold spring but it’s there, on the edge, pushing it’s way inward towards us.

For some reason we forgot to add bread to our grocery order, even though we both said, multiple times throughout the day…I’ve got to add bread to the list. When the groceries were delivered on Friday, we had no bread. We have been talking about cutting bread out of our diets, but I don’t believe either of us were ready to go cold turkey. So we decided to make a loaf in the bread maker. Mom took care of putting the ingredients in, noticed the bread machine yeast was quite old but tried it anyway. Unfortunately, the yeast was too old and the bread came out pretty nasty.

So this morning, I decided to make a couple of loaves the old fashioned way. I had a couple of yeast packets that were still good, found a new recipe online and off I went. The recipe was a lot different than Mom’s recipe that I’ve used for years, less ingredients, less punching and rising but worth a try.

It was 3 pm before the bread was ready to be tasted and oh, so worth the wait. The aroma in the house, fresh baking bread, there’s nothing quite like it. And the bread was scrumptious!

While the bread baked I made a batch of chocolate chip cookies. I’m happy to say that I’ve found the sweet spot for this oven. It took several batches but I’ve found it and they turned out beautifully!

Creativity comes in many forms…including baking!
